菊粉酶分为外菊粉酶和内菊粉酶。

Application

黑曲霉菊粉酶已作为糖苷水解酶(GH),以便研究利用多微生物孔板模型从微生物生物膜上分散细菌(铜绿假单胞菌金黄色葡萄球菌)的可能性。

Biochem/physiol Actions

菊粉酶水解菊粉,产生寡糖并释放果糖。它还能将蔗糖和棉子糖的末端果糖单元分离。
菊粉酶用于高果糖糖浆,具有治疗用途。据报道菊粉酶对蔗糖有很高的活性。

Other Notes
