Biochem/physiol Actions

α-胰凝乳蛋白酶是丝氨酸肽酶，并且具有通过二硫键连接的三条多肽链（A 链-13 残基，B 链-131 残基和 C 链-97 残基）中包含的 241 个氨基酸残基。发现该酶的分子量为 25kDa。pI 是 8.75。它选择性地水解酪氨酸、苯丙氨酸、色氨酸和亮氨酸的 C-末端侧的肽键。Ca2+ 激活和稳定酶。该酶被二异丙基氟磷酸盐（DFP）、甲苯磺酰氟（PMSF）、N-对甲苯磺酰基-L-苯丙氨酸氯甲基酮（TPCK）、胰凝乳蛋白酶抑制剂、抑肽酶、α1-抗胰蛋白酶和 α2-巨球蛋白、10mM Cu2+ 和 Hg2+ 抑制。
