trans-p-Coumaric acid (4-hydroxycinnamic acid) is the trans isomer of p-coumaric acid, a hydroxycinnamic phenolic acid widely distributed in plants and foods. It occurs in plant tissues (including as a constituent of cutin) and has reported antioxidant and antimicrobial activities relevant to food quality and health research. Testing its levels is important to profile phenolics for food authenticity and processing control, to gauge dietary exposure, and to explore potential bioactivities in nutrition and biomedical studies. Sensitive, selective quantification is typically performed by HPLC or LC–MS/MS, with validated methods available for complex matrices like human plasma to support PK/PD evaluations.
