Sodium nitrate is a nitrate salt of sodium, which finds application as a preservative in cured meat products for the protection against Clostridium botulinum and other Clostridium species.
Application
Sodium nitrate may be used as an analytical reference standard for the quantification of the analyte in the following:
- Ham using reversed-phase high-performance liquid chromatography with diode array detection (RP-HPLC-DAD).
- Human saliva samples using ion chromatography (IC) technique.
